Stace is a four-year Utah High School Rodeo Association (UHSRA) state qualifier in team roping and calf roping, earning multiple saddles, buckles, and prize money throughout his career. He has a strong passion for team roping and training horses.

He is the son of Jesse and Kristi Gilbert and has an older sister, Shaylee, and a younger brother, Trent. Rodeo is a family tradition, with all members participating and roping being the family favorite.

Outside of rodeo, he enjoys training and shoeing horses, ranching, and roping. He also has a strong interest in welding and farrier work and is eager to expand his skills through the welding and machining programs at Utah State University Eastern.
