High School: Was a three-time varsity letter winner and two time captainfor Clearfield and was twice named to the All-Region 1 first team. Bitter received All-Area honors by the Ogden Standard Examiner during her junior and senior year. Received All-State Honorable Mention honors three times by the Deseret News. Was a 6A All Star and Third Team All-State honoree by the Utah Volleyball Coaches Association after her senior year in 2017. Led her team in multiple statistical categories during her junior and senior seasons.

Personal: She is the youngest of eight children of LeGrand and Donita Bitter. She has 20 nieces and nephews. Enjoys being outdoors and looking at the stars in her free time. Has aspirations to become a volleyball coach some day and has interests in studying to become a dental hygienist. Chose USU Eastern because of the atmosphere and the community.
